An etch is different: it is surface damage caused by a chemical reaction, and it is corrected with appropriate refinishing methods. For example, marble floor polishing can refine a dull or worn finish. Countertop etch correction, stain removal, chip repair, and scratch removal address different types of surface damage.
Honing creates a smooth matte or satin finish with abrasives, while polishing refines the surface toward a higher sheen. An impregnating sealer may reduce absorption and improve stain resistance, but it does not prevent etching, scratches, wear, or every stain, and some stones may not need sealing at all.
